a delicious Libyan dish with rice lamb and chicken that's full of aroma and spice with fruit and nuts
INGREDIENTS:
3 x Tbsp of Ghee 1 x onion (chopped and diced) 1 x garlic clove 1 x garlic (chopped and diced) 3 x chicken legs 250g of Lamb 2 x onions (chopped in half) 2 x tomatoes 4 x bay leaves handful of Basil Himalayan rock salt ground pepper 1 x ginger root (chopped) 500g of basmati rice
METHOD:
get a large deep pan and add 3 tbsp of Ghee and heat up then add some chopped onion and garlic fry till light brown now add the meat and add the spices and cook for 10 minutes until light brown colour, now add the onion (halved) and tomatoes and garlic clove, bay leaves, ginger root, and pepper and stir. Now add boiling water over the meat make sure it covers the meat, add some pink Himalayan rock salt and place the lid on top and let it cook for 2 hours on low heat (gas mark 3). Get the rice ready by straining it with water to get the flour out otherwise, it sticks together then when the chicken and lamb is done place the meat pieces and tomato and onions into a pot and cover while leaving the broth in now add the rice to this broth add some basil and cook the rice until done (10-15) minutes, then when done add the rice to a large plate and add the meat pieces on top of the rice add some raisins and nuts, that's it!
