(FOR THE LIQUID BATTER) 1.5 cup Milk (skimmed or whole milk) 1 x whole egg 3 tbsp rock/sea salt 3 tbsp ground pepper 3 tsp paprika
(FOR THE COATING) 1.5 cup of plain flour half cup of cornflour/starch 3 tbsp rock/sea salt 3 tbsp ground pepper 1 tsp onion powder 1 tbsp garlic powder 3 tbsp paprika 1 tbsp oregano 2 tsp chili powder 3 tbsp of cayenne powder
METHOD :
Ok so first of all get your chicken ready.. using 8 chicken legs/fillets and slice all the chicken so the batter can go inside and the meat will be cooked from within ,now get a deep pan and fill with vegetable oil (just enough to cover the chicken turn on at medium heat, now dip your chickens one by one in the batter and then smother it in the flour mix for a good 10-20 seconds then back into the batter and then back into the flour mix this will make sure the skin will be nice and thick and crispy now put the chicken piece aside on a bowl/plate now repeat these steps with all the pieces . when you've done this place them in your deep pan with your hot oil but just add 3 pieces at a time otherwise it won't cook properly cook for 10-15 minutes turning each side (i would say 5 minutes each side) until crispy golden brown. when you've done all your pieces set side for 2-3 minutes and dig in..!!! have a go and tell me what you think , don't forget to wash up as you go..
